Lorsque Justine rencontre Sugio Yamaguchi (ex-Botanical Restaurant) et découvre la douceur et la poésie de sa cuisine, quelque chose en elle fait tilt. Elle décide alors de réaliser son rêve : cuisiner « pour de vrai ».
Après une formation certifiante à l'école Ferrandi Paris, elle enchaîne les stages et fait une rencontre déterminante : celle de Manon Fleury (ex-Le Mermoz, ex-Elsa, résidence au Perchoir Ménilmontant), qui deviendra son mentor. Manon lui ouvre les portes d'une cuisine créative et humaine, respectueuse des producteurs et de leurs produits.
Fille de la campagne, originaire de l'Est de la France, Justine grandit avec un profond respect pour la nature et ce qu'elle a à offrir.

When Justine meets Sugio Yamaguchi (ex-Botanical Restaurant) and discovers the sweetness and poetry of his cuisine. Something inside of her just clicked, she decides to realize her dream: to cook "for real".
After a certification training at the Ferrandi Paris school, she goes through internships and an important event, the person who will remain her mentor, the chef Manon Fleury (ex-Le Mermoz, ex-Elsa, Residency at Le Perchoir Ménilmontant). Manon will open the doors to a creative and human cuisine, respectful of producers and their products.
A countryside girl from the East of France, Justine grew up with a deep respect for nature and what it has to offer.
